Fudgy Brownie Rolls

We all love cinnamon rolls and brownies, so why not combine the two? These Brownie Rolls are what happens when soft brioche dough meets rich fudgy brownie flavour. The dough bakes up unbelievably fluffy and buttery, while the filling melts into a thick chocolatey swirl made with cocoa, sugar, butter and crumbled brownies. Every layer is gooey, rich and packed with deep chocolate flavour without being overly sweet. Once baked, the warm rolls are topped with a chocolate cream cheese frosting that melts perfectly into every swirl. To finish them off, they’re covered with even more brownie chunks for the ultimate bakery style look and texture. The contrast between the soft brioche dough, silky frosting and fudgy brownie pieces makes every bite ridiculously good.
This recipe starts with the same soft brioche dough base I use for all of my rolls because it stays unbelievably fluffy, buttery and pillowy every single time. A rich chocolate filling made from butter, sugar, and cocoa powder is spread over the dough, then topped with crumbled fudgy brownies for an extra gooey bite in every swirl. The dough is rolled tightly, sliced into 6 thick buns and baked until perfectly golden brown and soft in the centre. Once the rolls come out of the oven, they’re topped with a creamy, melt in your mouth frosting that balances out the richness without making the rolls overly sweet. To finish them off, they’re drizzled with Nutella and topped with even more brownie pieces.
